The Shillong street food map: where the city’s night kitchens live

Shillong’s night kitchens — the family-run stalls that feed the city after dark with smoked pork, jadoh and tung tap — are being documented by a citizen mapping project.

The map, built by students and food writers, records each stall’s history, signature dish and the family that runs it.

The urgency is practical: redevelopment is coming to the city’s older quarters, and the map is a memory before the bulldozers.
